Patrick's allergies have been horrible lately. A week ago he was to the point where his legs from his thigh to his ankles were covered in excema as well as the inside of his elbow and wrists. And, the screaming itching fits that he experienced for several months last year had started again. The pediatrician suggested that we cut out all of his known food allergens (we had only cut out the easiest to avoid and most reactive ones, but obviously there is still something) and avoid as much as possible his environmental allergens (Fungi/Mold, Timothy Grass, Bermuda Grass, Johnson Grass, Oak Tree, Mites, Ragweed, and Marsh Elder). She also prescribed prednisone to help kick the allergic reaction that he has been having along with a high strength steroid cream to clear the rash. We were warned that the meds might cause tantrums and other fun side effects, but aside from two skipped naps, we didn't notice any side effects from the meds. His legs are clearing up! Yay! And, he says he is feeling less itchy. There is one spot on his leg that has not been clear since the start of last Summer. I wondered if I'd ever see smooth skin in that spot again, and it is nearly all healed. :)
The hard part now is adjusting to his new diet.
Here's what we've been avoiding for the last year:
Orange, Lemon, Lime, Grapefuit, Kiwi, Pineapple, Strawberry, Tomato, Egg White, Oat, and Chocolate
Now we also have to avoid:
Wheat, Milk, and Soybean
I'm realizing that most everything we normally eat either has wheat or milk in it and that most gluten free snack alternatives have soy in them. So, no more cracker type snacks around here.
Patrick's usual breakfast is a yogurt and shredded wheat cereal in milk. His usual lunch is noodles and shredded cheese. And, dinner usually has some kind of bread (tortilla, biscuits, noodles, etc). So, there are major changes happening in my kitchen. Corn and rice are our friends right now. :) Besides fajitas or beans served on corn tortillas, I have no idea what to fix for lunch. Do you have any recipes you want to share that are Patrick friendly? Please?

Oh my goodness Katy, that is so hard. I would be tearing my hair out. My friend's little girl has those same allergies. I'll ask her for some recipes. Oh and if you have a Winco near you, they have rice flour that you can bake with. And check Cherish's blog cause she is now an expert on using flaxseed in place of eggs for baking. Good luck!!!

We took gluten out for awhile and I amde muffins and breads in the bread maker using bean flour, rice flour and xantham gum...but honestly, we relied mostly on corn tortillas.
